Inspections feel unpredictable from the inside and are surprisingly consistent from the outside. Across eleven customer inspections last quarter, the requests clustered into four things.

The current permit, posted and legible. The most common failure is not an expired permit but a current one nobody could produce.

Proof of the most recent renewal payment. A receipt, not a bank line.

Staff certifications for whoever is on shift. Food handler cards are the usual gap because they expire per person, not per site.

The previous inspection report and what you did about it. This is the one people forget entirely.
